Wheat Spice Cake

I’ve been toying with this recipe for a while, its taken many twists and turns but I think its finally just perfect.  Enjoy!

Wheat Spice Cake

  • 1 3/4 C Whole Wheat Flour
  • 2 Cups Unbleached Flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cardamom
  • 1/2 tsp ground ginger
  • 1/2 C Blackstrap Molasses
  • 1 C Honey
  • 2 tsp white vinegar
  • 1 C Applesauce
  • 2 C Milk

Preheat the oven to 350 degrees.  Grease & flour a 9X13″ pan.

Mix all the dry ingredients together in a large bowl.  In another bowl combine the wet ingredients and whisk together well.  Pour the wet ingredients into the dry all at once.  Whisk together until well combined.  Pour into your pan and bake for about 40 minutes, until a toothpick comes out clean.  Allow to cool before frosting.

I frosted this with a standard lemon buttercream, but I think a cream cheese frosting would be outstanding.

This is a dense, moist cake, a small piece will go a long way.

Mmm. This looks yummy. Even if I don’t know what cardamom is. :/

You’ve probably had cardamom if you’ve eaten Indian food but just didn’t know it. You could easily skip it in this recipe and the recipe would still be very good.

You had to make a cake with my favorite things in it – molasses, cardamom, ginger, applesauce…oh my! Looks heavenly!

I thought of you when I was making it – I remembered how much you liked cardamom and honestly thought to myself “Darby will like this cake” too funny.
