Weekend Preserving

We hit a small local fruit and veggie stand early Saturday morning and left with a bevvy of local and not-so-local (Washington state) produce to put for our winter pantry.

Spiced Brandied Peaches

We put up peaches, regular old peaches in a light honey syrup and we brandied some too.  The brandied ones (above) are peeled peaches with a honey syrup and brandy poured over top with a few cloves and allspice berries for spice too.

Pickles

Thankfully the Montana Hutterite colonies are better farmers than I am, because they have cucumbers something that was a complete failure for me.  We bought enough to make seven pints of bread and butter pickles.  I’ll probably buy another bag of cucumbers from them for dills too.

Dried Apricots

We dried a box of apricots in the dehydrator too.  We like to munch on these and they make for a great little snack in our packed lunches.

I just froze Soy Beans for Edamame, Broccoli and Cauliflower over the weekend.

I’ve put the first tiny batch of roast tomatoes in the freezer, and some corn..but Sunday, when I planned to go pick peaches and blueberries, it was POURING. Since it’s the first significant rain since June, and since it gave me a good excuse to spend my Jeff’s (as opposed to your Jeff’s) birthday snuggling with him instead of picking fruit and canning, , whic pleased him, I can’t complain, but no putting-by was accomplished.

I’m reminded that I need to place my order for peaches (a local place gets them from GA and they’re a great price). I was going to just get one half-bushel box, but my kiddo has already eaten all the dried peaches I made in June and July, so I’m thinking I might need to get a whole bushel and get the dehydrator cranking (she *loves* to snack on dried fruit, which is awesome). We’ve got some in the freezer, but maybe could stand to freeze a few more. And we’ve attempted some homemade pickles–just a jar of fridge pickles, and if we like how that seasoning blend turned out, we’ll get a bunch more cukes from our favorite farmer and can some up.

I made Chow-Chow, stuffed serrano chilis, pickled green tomatoes, pickled green beans, and I’m really looking forward to making something like your brandied peaches.
