A recipe for you today:
Kathie’s Truffle Cookies

2 oz unsweetened chocolate
1/2 Cup butter
1 C brown sugar, packed
3/4 C sugar
2 eggs, beaten
2 teaspoons vanilla
2 C flour
1/3 C cocoa
1/2 tsp baking powder
Preheat oven to 350. Melt the chocolate and butter in a double boiler, set aside to cool. Combine the sugars, eggs, and vanilla. Add the melted chocolate mixture and stir well. Add the flour, cocoa, and baking powder, mix until combined. Drop by teaspoons full onto greased baking sheets. Bake for 10 minutes.
Note: I used a #60 cookie scoop and got 60 cookies total. The cookie scoop works to make them look a bit like truffle candies in my opinion.

I’d love to be entered in this one! congratulations on your blogiversary, Kathie. You inspire me! I recently made your spiced squash bread, substituting pumpkin, and what a hit (there’s none left, of course, ha) I posted about it and included your link…such deliciousness must be shared!
Thanks!!

Sign me up, please. You got me with “Flathead Cherry Sauce.” Many fine fruits grow in New England, but cherries are scarce and bloody expensive.
And those cookies…I may need to make them for the post-Thanksgiving party, where we try to serve amazing food that’s not on the traditional menu.
The cookies look really good and I think that I feel a baking session coming on.
Please enter me in your give-away.

I think I’ll try these cookies. It’s been a while since I’ve made chocolate cookies.

I think I just found my cookie swap recipe for work this year
. They look delicious and easy. Thanks!
It seems that I always rush through the first half of my week, not checking many blogs, and look what I miss! Three posts by Kathie.
I am going to pass on the Activism Challenge, not because I don’t think it’s important, not because I don’t want to help others, but because I do help and my life is already full.
Congrats to Simply Authentic for winning the draw!
Ah, greedy, I know, considering I just won one of your giveaways, but you had me at apple rings…sign me up pls! Those cookies look sinful.
