Spicy Pinot Noir Jelly

Recently, I bought some pinot noir that I just didn’t like.  It was on sale and well, I can see why.  It sat around for a while awaiting a purpose.  This weekend, I found purpose for that bottle: jelly, more specifically a spicy pinot noir jelly.  I think it would make a wonderful hostess gift or addition to a gift basket.  I canned it up in 4 ounce jars, which just seemed to be the perfect size for gift giving.

Spicy Pinot Noir Jelly

Spicy Pinot Noir Jelly

  • 2 1/2 Cups Pinot Noir Wine
  • 4 Whole Star Anise
  • 5 Whole Cloves
  • 1 Cinnamon Stick
  • 4 Cups Sugar
  • 1/4 Cup Lemon Juice
  • 3 Ounces Liquid Pectin

Put the wine in a saucepan with the star anise, cloves, and cinnamon stick.  Bring to a boil, lower heat and simmer 5 minutes.  Cool for 10 minutes, then strain out the spices.  Measure out 2 cups of wine.

Combine the 2 cups of wine with the lemon juice and sugar.  Bring to a boil.  Add the liquid pectin and boil for 1 minute.  Remove from heat, skim off foam.  Pour into sterilized jars, process in a boiling water canner for 10 minutes.

Uh, why have I never seen nor had the pleasure of tasting wine jelly?! This sounds like a great combination of pleasures to me (and hopefully that extra flavor made the pinot noir flavor improve!). :) Hope it was a fun to make as it appears beautiful–what a great color. Sounds like a great idea. Its always gratifying to find a new use for something and not let it go to waste.

A-HA!!! Good thinking, have been gone awhile, but this is fantastic.

I tried Pinot Noir once and nope to spicy for me, but this is great, would make a perfect gift.

I’m interested to try this! I would ask what it even tastes like… but honestly, for 2 cups of wine, I’m going to try it no matter what! You’ve thoroughly convinced me with that beautiful picture, haha.
