Recently, I bought some pinot noir that I just didn’t like. It was on sale and well, I can see why. It sat around for a while awaiting a purpose. This weekend, I found purpose for that bottle: jelly, more specifically a spicy pinot noir jelly. I think it would make a wonderful hostess gift or addition to a gift basket. I canned it up in 4 ounce jars, which just seemed to be the perfect size for gift giving.
Spicy Pinot Noir Jelly
- 2 1/2 Cups Pinot Noir Wine
- 4 Whole Star Anise
- 5 Whole Cloves
- 1 Cinnamon Stick
- 4 Cups Sugar
- 1/4 Cup Lemon Juice
- 3 Ounces Liquid Pectin
Put the wine in a saucepan with the star anise, cloves, and cinnamon stick. Bring to a boil, lower heat and simmer 5 minutes. Cool for 10 minutes, then strain out the spices. Measure out 2 cups of wine.
Combine the 2 cups of wine with the lemon juice and sugar. Bring to a boil. Add the liquid pectin and boil for 1 minute. Remove from heat, skim off foam. Pour into sterilized jars, process in a boiling water canner for 10 minutes.

Uh, why have I never seen nor had the pleasure of tasting wine jelly?! This sounds like a great combination of pleasures to me (and hopefully that extra flavor made the pinot noir flavor improve!).
