Sourdough Strawberry Muffins

If you happen to have some strawberries and sourdough cast-off laying about, I highly recommend combining the two into some muffins.  I just dumped everything into one bowl and mixed well, so easy, quick, & yummy!

Sourdough Strawberry Muffins

  • 1 Cup Sourdough Starter*
  • 1/2 C Whole Wheat Flour
  • 1 1/2 C Unbleached All-Purpose Flour
  • 1/2 C Unsweetened Applesauce
  • 1/2 Cup Sugar
  • 1 Egg
  • 3/4 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1/2 C Milk
  • 1 Tablespoon Vanilla Extract
  • 1 1/3 Cup Strawberries, diced

Preheat oven to 375 degrees.  Mix everything but the strawberries in a large bowl, until combined.  Fold in the strawberries.  Pour into greased muffin tins.  Bake 30 to 35 minutes or until a toothpick comes out clean.  Allow to cool 5 minutes in the pan before removing to cool completely on wire racks.  Makes 18 muffins.

*Note: I use a whole wheat sourdough starter, if you use a white flour starter you may want to switch the wheat & all-purpose flour amounts.  Or not, you decide.
