PB & J No Bakes

I’ve been faithfully avoiding the list of foods I’m allergic too.  It’s been about 2 months now and I must say there is a huge difference in how I feel.  My energy level is much higher and my thinking is much clearer.  Now to be honest, I’m not sure that I would have said before that my energy level was low or that my thinking was muddy but in hindsight I can feel the difference.  We’re still working on the swollen, tender joints but even those are getting better as we refine treatment methods.  I recently switched to a topical anti-inflammatory instead of a pill and the difference that has made has been quite large in just a few days.

I do occasionally have cravings for foods on that allergy list, but those are getting fewer.  I find it harder to want to indulge when I’m feeling so very good.  I’ve been trying to come up with recipes to fight those cravings, like these no bakes.  Jeff likes these as much as I do, so I know the fact that their gluten-free, dairy-free, and egg-free doesn’t effect their flavor one bit.  They also happen to free of refined sugar.

PB & J No Bakes

Peanut Butter & Jelly No Bakes

  • 2/3 Cup Almond Meal
  • 2/3 Cup Unsweetened, Shredded Coconut
  • 1/3 Cup Honey
  • 1 teaspoon Vanilla
  • 1/2 Cup Peanut Butter
  • 1/4 teaspoon Salt
  • Jam / Jelly of your choice

Mix everything but the jelly together, until well combined.  Form into balls and place onto a wax paper-lined cookie shoot.  Indent each ball with your thumb to make a small crater.  Into this crater, place a dab of your jam/jelly.  Refrigerate until well chilled and firm.  Enjoy!  (Keep leftovers refrigerated).

PS: I used apple butter in the ones you see in the photo and it was super yummy.

It makes me so happy to realize the changes are already showing good results. If you make a radical lifestyle change, it ought to WORK.

This is how I like things to be: easy, tasty and good for me. And using up some jam or jelly is a bonus. Thanks!
