Oatmeal Jam Bars

I made more jam last summer than we would probably eat in five years.  I’ve been trying to come up with ways to use up the stash.  Over the weekend, I made these bars for the potluck and they were a hit.  I hope you’ll give them a try with some of your favorite home-canned or store bought jam.

Oatmeal Jam Bars

  • 1 1/4 Cups Flour
  • 1 1/4 cups Rolled Oats
  • 1/2 Cup Sugar
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 3/4 Cup Butter, melted
  • 2 teaspoons Vanilla Extract
  • 1 Cup Jam
  • 1/2 Cup Shredded Coconut

Preheat oven to 350 degrees.  Grease a 9 X 13 inch pan.

Combine the flour, oats, sugar, cinnamon, and baking powder in a large bowl.  Mix together the melted butter and vanilla extract.  Pour the liquid ingredients into the dry and mix thoroughly.  Remove 1/3 of the mixture and place in a small bowl.   Combine the coconut with this one third of the batter.  Set aside.

Press the mixture without the coconut into the bottom of your pan.  Spread the jam on the top of this crust.  Sprinkle the jam with the coconut crumb mixture.  Bake in the preheated oven for 25 to 30 minutes.  Allow to cool completely before cutting into squares.  Enjoy!

Buggers, I did some editing and obviously deleted the cinnamon. I corrected the error, sorry about that – 1 teaspoon.

Sounds and looks delicious! Thank you for sharing the recipe.
I love to add my own homemade jam into plain yogurt, instead of buying flavored yogurt.

I assume it’s 3/4 Cup butter…hope that’s right, as I’m getting ready to make them!
