Over the summer, I infused some honey with our homegrown mint. Can I just say that it’s darn incredible? Each and every time I open the jar, I’m overwhelmed but the incredible minty aroma. Seriously, the smell alone makes my mouth water and it tastes even better. Generally speaking, I put just a touch in a cup of herbal tea but I admit to occasionally taking a small taste just to allow the flavor to wash over me.
I wrote about honey infusions a few years back. In that original article, I suggested letting the honey infuse for a mere week, let me just say that longer is definitely better. The mint infused for a solid month and that time allowed for a super flavorful honey. There will be more of this mint infused made next summer because I wish I’d saved some for gift giving. I’m also thinking about putting some of it in my lip balm creations going forward.

This season I discovered the most ridiculous thing – fire roasted beets. At some point it crossed my mind to wrap one of our largish beets in tin foil and nestle it into the ashes at front edge of our wood stove. Oh my, roasted beet has a completely different texture than boiled and because the fire is always on this time of year I don’t have to remember to toss it into the oven when I’m roasting a piece of meat for dinner. It actually works better for the bigger beets but the smaller ones can be done that way to. They just burn quicker. That’s what I’m enjoying out of my pantry these days!

Everyone is infusing honey these days but me, I gotta get on the stick. I pay too much money for Lavender Honey (yum) and I grow lavender. Yeish…. oh wait, I grow mint too!
A Dilly bean or three and a few slices of dry apple have been my school snacks of choice lately. The whole reason for drying apples ($7.00 + a pound at the grocery, when you can even find them without chemicals) was for caramel apple biscotti…. which I have not had time to make yet. Good for my hips, not so good for showing off.
I made a basil infused honey, but I don’t care much for the taste (next time I shall try mint). I have found however, that it is excellent in my homemade shampoo.
I’ve also discovered the awesome-ness that is homemade chocolate syrup. I don’t think I’ve ever had so much chocolate milk in my life.
