Lemon Verbena Cordial

 Lemon Verbena Cordial

I like to experiment with cordial and sweet liqueur making.   I’ve made coffee liqueur, berry cordials, and apple liqueur, in the past.  I decided a few weeks back to try my hand at making some Lemon Verbena Cordial, as we had lots of Lemon Verbena growing in the garden.  It’s turned out quite well, its lightly lemon-flavored with this great herbal background that is a little tough to explain exactly.  I’m smitten with its light yellow tint, too. 

It’s a loose method but for those of you interested in trying it:

  1. Fill a pint jar loosely with clean lemon verbena leaves.  Pour vodka over all.  Seal and let sit in a dark cupboard for about a month – give it a shake every now and then.
  2. At the end of the month, strain the leaves from the vodka.  Combine the lemon verbena vodka with about a pint of sugar syrup (I used an extra light syrup leftover from canning cherries, but you could use a sweeter syrup if you desire).  Enjoy!

It’s probably late to try it this year, but I’ve done a rose petal cordial before that was quite lovely (and nice in rice pudding, too). Will dig up the recipe.

i’m going to have to try this, i love lemon verbena! i make a simple syrup with a lemon verbena infusion that tastes great over peach crisps and vanilla ice cream! and the color is limey green.
