Even as we plan next year’s garden, we have this amazing blessing of this year’s garden. We also have this wonderful problem of deciding on what to eat and what to preserve as we gather each day’s harvest.
Some days it’s easy enough to whip up a salad or a stir-fry and use everything fresh. Other days we’re eating fresh and putting up just a jar or two of something. Again, all good problems to have and as I watch the freezer and pantry shelves fill, I know that we’ll have the good problem of deciding what homegrown thing to eat all winter, too.
There are even the good problems of getting creative in the kitchen and trying out some new things to make use of summer’s bounty. Things like Sweet Pickled Daikon and variations on mint and pea pesto.
