I like carob for carob not as a replacement for chocolate which I’ve seen done too many times. If you don’t like carob I believe you could easily subsititute cocoa powder and come out with something equally yummy.
This recipe is gluten-free, egg-free, and dairy-free if you need those things. If you don’t, you’ll still ‘em.
Carob Brownies
- 1 Cup Sorghum Flour
- 1/2 Cup Carob Powder
- 1/2 Cup Tapioca Starch
- 1/2 Cup Potato Starch
- 1/2 teaspoon Salt
- 1 teaspoon Xanthan Gum
- 1 Tablespoon Baking Powder
- 1 Cup Brown Sugar
- 1/4 Cup Unsweetened Applesauce
- 1/4 Cup Olive Oil
- 1 Cup Milk (Whatever you like Cow, Goat, Soy, Almond, whatever)
- 1/2 Cup Chopped Nuts
- Preheat oven to 375 degrees. Grease a 9″ square cake pan.
- Sift together sorghum flour, carob powder, tapioca starch, potato starch, salt, xanthan gum, and baking powder. Set aside.
- Whisk together brown sugar, oil, applesauce, and milk.
- Pour wet ingredients into dry and mix well. Stir in the nuts until incorporated.
- Spread into prepared pan and bake for 20 to 25 minutes, until an inserted toothpick comes out clean.
