Coconut Raisin Muffins

It seems I’ve caught a bit of a cold.  Mostly I just feel tired and stuffy.  I know this will pass and in the meantime I’m going to rest and read and maybe knit.  I might eat a few more of these with some hot tea as well.  They were originally made as lunch box snacks in an attempt to use some items in the pantry (coconut milk).  Both Jeff and I adored them, so I have to share the recipe with you all:

Coconut Raisin Muffins

 Sift Together:
2 Cups Flour
2/3 Cup Sugar
2 teaspoons baking powder
1/4 teaspoon salt

Whisk Together:
1 Cup Coconut Milk
1/4 Cup Applesauce
1/2 teaspoon Vanilla
1 Egg, Beaten

Combine the dry and wet ingredients, stirring until well incorporated.  Fold in 1 Cup Raisins. 

Divide among 12 greased muffin cups.  Bake in a preheated 400 degree oven for 20 minutes.
