Coconut Mocha

I have deep affection for coffee.  I also have a sweet tooth the size of Montana and well, you can never go wrong with chocolate.  Last week, I had a hankering for a mocha and well, I was at home and had no desire to leave the house for a fancy coffee.  I did happen to have some hot coffee in the carafe and decided to wing it.  Sometimes the best bits of inspiration and tastiness come in these moments.  The resulting drink was perfect after our Thanksgiving meal and honestly would be great any old time of day.

Coconut Mocha

For each mug / serving you’ll need:

  • 2 teaspoons Cocoa Powder
  • 1 teaspoon Honey or 1/2 teaspoon Stevia (more or less to taste)
  • 1 1/2 Tablespoons Full Fat Coconut Milk (again more or less to taste)
  • 10 ounces Hot Coffee

In a coffee mug, stir together the cocoa, honey, and coconut milk.  Pour the hot coffee over the mixture and stir until completely dissolved.  Serve hot.

Some Notes: You could easily use regular old sugar or other sweetener as you desire.  I imagine heavy cream would be awesome instead of the coconut milk as would plain old milk or milk alternative (almond, soy, etc.).  I went with full fat coconut milk in an effort to make it slightly richer, creamier and keep it dairy-free.

Other Ideas: Consider adding a pinch of cinnamon for extra flavor or even some coffee or mint liqueur.  For a nice dessert presentation (and a sweeter drink) you might want to add whipped cream or marshmallows.
