Coconut Banana Bars

I like to make little treats for Jeff’s lunchbox, here’s the latest treat making the boxes.  These are quick and easy to whip up and are pretty yummy too.

 Coconut Banana Bars

Coconut Banana Bars

  • 1/2 Cup Unbleached Flour
  • 1/2 Cup Whole Wheat Flour
  • 1 TBSP Wheat Germ
  • 1 tsp Baking Powder
  • Pinch of Salt
  • 1 Egg
  • 1/2 Cup Brown Sugar, packed
  • 1/3 Cup Milk
  • 1/4 Cup Olive Oil
  • 1/2 tsp Vanilla
  • 1 Ripe Banana Mashed
  • 1/4 Cup Shredded Coconut, unsweetened

Preheat oven to 350 degrees.

Sift together the flours, wheat germ, and baking powder.

Whisk egg well, add the brown sugar, milk, oil, vanilla, and banana whisking until well combined.  Fold in the dry ingredients and coconut – mixing well.

Pour into a greased 11 X 7″ pan.  Bake for about 25 minutes, until a toothpick comes out clean.  Allow to cool.

I drizzle it with a little powdered sugar icing and sprinkle the whole thing with more coconut – but that’s completely optional.  Enjoy!
