It’s been a busy, slightly stressful few weeks at work. In the end, I can take it but there are days when I need a little stress relief and last night that stress relief took the form of baking and baking with chocolate. The resulting bars were yummy and I felt the need to share. You will want to have these with a tall glass of your favorite milk.
Chocolate Chocolate Chip Oatmeal Bars
- 1 Cups Rolled Oats (Gluten Free if necessary)
- 3/4 Cup Rice Flour
- 2 Tablespoons Potato Starch
- 2 Tablespoons Tapioca Starch
- 2 Tablespoons Instant Espresso Powder
- 3/4 Cup Sugar
- 1/4 Cup Cocoa Powder
- 1 teaspoon Baking Powder
- 1 1/2 teaspoons Ground Flax Seed
- 1/2 teaspoon Xantham Gum
- 1/2 teaspoon Salt
- 1/3 Cup Olive Oil
- 1/3 Cup Milk (Dairy or Non your choice)
- 1 teaspoon Vanilla Extract or Coffee Liqueur
- 1/2 Cup Chocolate Chips
Preheat oven to 350 degrees. Grease a 9″ square cake pan.
Combine the dry ingredients into a large bowl and whisk until combined. In a small bowl, whisk together the olive oil, milk, and vanilla extract. Pour the wet ingredients into the dry and mix well. Stir in the chocolate chips until well combined.
Spread the dough into the prepared pan in an even layer. Bake for 20 to 25 minutes or until set. Cool on a wire rack before cutting into bars.
Be careful of the chocolate chips you use and these bars can easily be gluten-free, dairy-free, and egg-free.
