Chocolate Cherry Sourdough Muffins

I’m always looking for ways to use my sourdough starter cast-off.  I use it for pizza crusts and pancakes most of the time, but sometimes I get a little inspiration and new things are born. This past weekend, full of fresh cherry inspiration I came up with these:

Chocolate Cherry Sourdough Muffins

  • 3/4 C Whole Wheat Sourdough Starter Cast-Off
  • 1/2 C Cocoa Powder
  • 1 1/2 C Flour
  • 1/2 tsp Salt
  • 3/4 tsp baking soda
  • 3/4 Sugar
  • 1 egg
  • 1/2 C Unsweetened Applesauce
  • 1/2 C Milk
  • 1 tsp Vanilla
  • 1 C Chopped, Sweet Cherries

Preheat oven to 375 degrees.  Grease muffin tins.

Sift together cocoa, flour, salt, and baking soda.  Whisk together the sourdough starter and sugar, add applesauce, egg, vanilla, and milk whisking until thoroughly combined.  Stir in the sifted dry ingredients, mixing well.  Fold in chopped cherries.

Pour into prepared muffin tins, fill them 3/4 full.  Bake for 20 to 25 minutes.  Cool in pan 5 minutes before removing to a wire rack to cool completely.

I’ve submitted this to Yeastspotting (twice in two weeks, I must be full of inspiration these days.)
