The Christmas baking season has begun here at Two Frog Home. I’ve put together a list of Christmas cookies and goodies that I’ll be baking and freezing between now and shipping and/or giving time arrives.
Today and once week for the next three weeks before Christmas, I’ll share one of my Christmas goodie basket recipes with you. The list (which is subject to change) looks like this (this list only includes baked goodies not jams/jellies, dried items, etc.):

Cashew Chocolate Chip Cookies

Note: This is a variation on the Chocolate Oatmeal Roundup Cookies in the Death By Chocolate Cookies Cookbook by Marcel Desaulniers. I changed many of the ingredients but the original is worth trying too.

1 Cup Cashews (I used salted pieces & halves)

2 Cups Flour

1/4 Cup Cocoa

2 teaspoons Baking Powder

1 Cup Sugar

1 Cup Light Brown Sugar, packed

3/4 Cup Cashew Butter
-
1 Cup Butter
-
2 Eggs
-
1 teaspoon Vanilla Extract
-
2 Cups Chocolate Chips
-
1 1/2 Cups Rolled Oats
Preheat oven to 350.
Sift together flour, cocoa, and baking powder. Cream butter, cashew butter, and sugars. Add eggs and vanilla, mix well. Add sifted dry ingredients and mix until incorporated. Add cashews, chocolate chips, and oats, stir well.
Drop by tablespoons full onto greased cookie sheets, flatten the dough with your palm. Bake 10 minutes until edges are browned. Cool on wire racks. Enjoy!
Note: The salted cashews give this cookie a wonderful balance of sweet and salty – think chocolate covered pretzels.

I have a sugar cookie recipe that was my grandma’s that I always make at Christmas. The cashew chocolate chips cookies sound really yummy. I love both cashews and chocolate!
Looking forward to the Potica recipe – my hubby is from Montana and we have his grandmother’s potica pan. I’m curious to see if the recipes are similar. He is of Serbian descent.
I have a citrus sugar cookie recipe that I love it uses grated zest so you could use dried and it just adds this great hint of flavor. I haven’t started Christmas baking, still taking some time off after Thanksgiving but I’m looking forward to getting started.

Nita – My grandfather was born in Serbia, he was a naturalized citizen. Did your hubby grow up near Butte? I grew up in Pittsburgh and the only Serbian Descendants I’ve met in Montana are from Butte, seems Montana has more Swedish descendnts than anything else. Growing up we just baked potica on baking sheet, no special pan…
Badhuman – Citrus sugar cookies, sound delish! I have lemon cornmeal cookie that uses just the zest that is pretty yummny. That zest is so flavorful!
Do you freeze your bake-ahead cookies? I am definitely going to try this cashew/chocolate chip cookie (Yum!)

Gina – I bake the cookies then freeze them. Some cookies freeze better than others, though, these days I focus on making those that freeze well more often than baking a ton fresh in one day. These cashew/chocolate cookies freeze really well.
