Almond Meal Carob Cookies

Every once in a while we all need a little sweet bite don’t we?  Something to take the edge off a long or cold day, a little something to lighten the spirits of a loved one…  Well, I do and hope I’m not alone in that.  These are my new favorite way to get that fix.  They’re super easy, allow for tons of variation and whip up in no time completely by hand no need for mixer (though you could use one if you wanted too).

Dark Chocolate Strawberry Sandwich Cookies

Almond Meal Carob Cookies

  • 1 1/4 Cup Almond Meal
  • 1/3 Carob Powder
  • Pinch Salt
  • 1 1/2 teaspoons Baking Powder
  • 1/3 Cup Sugar
  • 2 teaspoons Vanilla Extract
  • 1/4 Cup Milk or Milk Alternative

Preheat oven to 350 degrees.  Grease a cookie sheet.

Mix all together and drop by Tablespoons full onto cookie sheets.  Bake in preheated oven for 10 to 12 minutes.

It’s that easy folks.  The variations are endless:

  • use cocoa powder instead of carob
  • substitute coffee liqueur for the vanilla extract
  • use coffee instead of milk
  • add chocolate or carob chips
  • stir in a handful of chopped nuts or dried fruit
  • make small cookies and make sandwich cookies (in the photo mine are filled with a puree of strawberries, powdered sugar, & goat cheese)

This recipe makes about dozen cookies, so double or triple if necessary.  Let your imagination go wild, it doesn’t take long to make these and it just might be the treat you need during these long days of February.

Hi Kathie,

I love your blog and your recipes! I usually buy raw almonds and was wondering if putting them through the grinder would make almond meal?
