Meal planning is so important and can be so time consuming. In my house we have a vegetarian, a diabetic, a teen and a pre-teen and it can be a challenge. If we don't plan it seems we end up making 2-4 different things at each meal.

Most Americans (even kids!) eat way too much meat. That's one reason I work for the Meatless Monday Campaign, a nonprofit public health campaign that encourages people to skip meat one day a week. The website is full of recipes I can use and modify for my family's diverse needs. You too can find recipe ideas, health information, and ideas on their site (www.meatlessmonday.com), or sign up for their weekly newsletter--it comes out every (guess what?) Monday."

I'm not so good at meal planning. I was very organized when I was feeding 7 people (four of them teenagers) but now I can cook once or two a week and then we eat leftovers.

I have posted a Doing Not Thinking Challenge post on my blog. It's Wednesday night, not Monday, but I'm DOING it.

You have some great suggestions! I tend to plan our meals once a week on the day before I plan to go to the grocery store, usually trying to use food from the freezer or pantry and also what's on sale at the store. Like you, I try to plan for a couple nights of leftovers. Now that I'm working at home rather than 50 miles away, I have more time to cook, but it's still nice to have a few nights where there's a good meal just waiting to be reheated.
